It all started back when I was just 12 years old. Going hunting with the guys making sauerkraut the day before we went into the woods. Tuck that  cabbage away in the cold cellar until opening day of trout season. We did this for years and then once the guys started getting older, I started taking on a little bit more responsibility. Doing it more and then when the guys got older and stop going hunting my dad and I would just do it together to spend quality father and son time together. Then as he got a little bit older and was diagnosed with cancer, I was forced to do it by myself. Then when he died, I started seeing some of his friends here and there they would ask me about the sauerkraut, so I made some they wanted more. I made some they wanted more I made some so I thought to myself I might be onto something here next thing you know I’m making hundreds and hundreds of pounds of sauerkraut started selling to the local  restaurants. I created a website with Darrensites.Pro and here I am having a successful business having a struggle for many years with drugs and alcohol and I finally decided to get clean and I decided to pay back for all the wrong I’ve done. The only way to do that I thought is to give 10% of my earnings to men and women with drug and alcohol recovery  issues. I know what it’s like to go through this with nothing so I’m willing to help and anything that is donated will also 100% go to this awful disease thank you for your support and God bless.

Perfect Reuben Sandwich

Perfect Rueben Sandwich


  • Sliced Rye bread, marbled, seeded or unseeded
  • Sliced Swiss cheese
  • 1 pound of thinly sliced across the grain Corned beef
  • Russian or Thousand Island salad dressing
  • Signature sauerkraut at the Chop Shop Steel City Sauerkraut


  1. Heat a flat grill to low to medium-high heat.
  2. Spread one side of two slices of bread with oil, margarine or butter.
  3. Place on grill and top each slice of bread with Swiss cheese.
  4. Top each slice with 3 to 4 ounces of thinly sliced Corned beef after briefly heating it on the grill (make sure it was cut again the grain.)
  5. On one slice of bread and for the best results add 3oz of  Steel City Sauerkraut♦. (Briefly dry it on the grill)
  6. Apply 2 table spoons of salad dressing and spread evenly over the sauerkraut.
  7. Season with salt and pepper.
  8. Lift each slice periodically to check for desired doneness.
  9. Carefully place the slice without the sauerkraut onto the other one.
  10. Press lightly, let cool for 2 minutes, cut and serve!

We reside in Butler, PA. and our health department approved kitchen is located in Pittsburgh PA. We have taken our Serve Safe classes and it is up-to-date.




My Process

I hand cut the cabbage to provide a crispy, crunchy texture. I then add only three more ingredients. There is no added persevatives for they are not needed in fermented foods. I then let the cabbage turn into sauerkraut after fermentation for several weeks. The results is a side dish or topping to many food choice.

Unique Framework

Unlike factory produced sauerkraut which heat their sauerkraut up to and beyond 110° which kills the probiotics of the cabbage. One ounce of Steel City Sauerkraut is equal to a 60 count bottle of pills of proboitics at the drug store.
